the way that chicken onions bacon and

everybody welcome to today just let me
say right off the top

good idea we wanted to start selling

just remember 100 percent of the profits

thing anyway look obviously we're still
at the Little Italy food hall we're
shooting here because it lets us have
enough separation Max's way over there
Chili's way over there I'm here and
that's all right though we're cool with
that but today's show is gonna be
awesome to go oh it's time for our not
not tacos they're ready sadly they're
not but it is time to start the episode
let's cook onion clearly and onion 1/2
of an onion that we're just gonna cut

Suri's like that and this breakup we're
gonna put this on the flattop and get it
softening uh-huh look at the way it
scatters Thanks oh we go give it a
little hit of oil play this kid
okay still going wow little oil the goal
is to just get these nicely softened and
caramelized we don't need any attention
here for a few minutes let's start with
our gravy yeah
poured order try not to talk goes no no
no that he's not here huh no no he's not
been here for a month in ham we're
closed
bro no we're not open if you haven't
heard most restaurants are not open no
I'm not being difficult I'm just telling
you the way it is well no I'm not being
an asshole six restaurants none of them
open here by the way if I walked outside
I could look at 40 restaurants in maybe
one is open I don't know no where are
you calling from I know it's ridiculous
no I don't know no that's the problem
with the country people aren't getting
what's going on right now it's a big
pandemic ten
Dilek there's nobody there pretty good
huh
all right we need to make gravy in this
pot I have two cups of boiling water but
here's how we're gonna make this gravy
max you ready flour here boy we're gonna
start by making broth and I like this
version of it this this is called better
than bouillon and for each cup I put in
two teaspoons which is about that
we just let that do its thing in a
couple minutes when it's all mixed in
and incorporated we're gonna thicken it
up but just let it go like that for now
and while it's heating that's a tent or
chicken and here we go how many times
have we done this how many times if we
looked at a deli roasted chicken and
wanted to do something delicious with it
and have and now here we'll do it again
so it's gonna take the whole breast like
that there's one breast and now just
shred it slightly slightly this is how
we want to put it on this sandwich I
love the idea of it being basically like
like that on top nice that's going right
on top let's talk bread for a second max
got it that's cornstarch here's what
we're using we've used this before and I
think the second I pull this up you're
gonna know why I like it ready look how
thick it is that's a nice thick piece of
bread this is gonna be an amazing
landing spot for everything that will go
on it and it's brioche so it's it's it's
it's sweet and it's squishy it's freakin
delicious we need to get some color on
this we need to get our gravy happening
and we're almost there
this is gonna be fantastic it's quick
its open-faced and it's old school
that's what I like about it come on come
on come on come on
onions are starting to get gorgeous
color look look so let's slide them down
make some room over here for a bread but
before we leave the onions let's add one
thing max you know what would be it's
got to be a little bit of butter on the
bread no on our onions oh yeah
fine yes I like it just let it start to
do its thing there it'll make them even
more rich but now our bread so we put
some butter down on the flattop right
here and the bread like I'm telling you
having a giant flattop like this at your
disposal there's one of the greatest
things ever makes me very very happy so
that's gonna start to get some color the
onions are doing their thing now it's
time for the gravy you see how we're
looking here oh my lookin fine okay
let's get the gravy happening because
we're almost there so I I don't know
this is cornstarch or flour I think it's
flour it's not my favorite thing to
thicken with but we're gonna we're gonna
add some to this little container of
water mix it up get the lumps out and
now we'll add some and we'll stir and
over the next couple of minutes that
will start to thicken beautifully
you know if you added it directly to
this it just wouldn't incorporate nearly
as nicely and I'm gonna go with this
being flour because if it was cornstarch
it would be happening a lot faster but
while we're waiting for this to thicken
a bit we're gonna add a couple things
one will be a touch of Worcestershire
maybe a half a teaspoon we're gonna use
what we have here at not not for our
cheeseburger Taco think of it as like a
like a steak seasoning little pinch of
that and a little pinch of kosher salt
not too much and we continue to miss and
it's getting there hold on I need more
of this just not hold on let me just do
this and there you go you can see it's
much thicker than it was another minute
and we'll be there you don't want to
pour water on top but you do want like a
thick gravy that's the goal nor wish I
had corn stir
it's absolutely flour because now it's
taking so long but now what now we're
getting close to like Thanksgiving
looking gravy how gorgeous is that I'm
good there David let's build this thing
and by the time we do this we'll be
beautifully thick all right time for the
chicken so little oil on the flattop and
now our chicken our goal is to warm it
up so the whole thing is way better when
you take a bite that's it I'm gonna flip
it this way and now we start to build we
start with our plates and our gorgeous
bread next up some of these incredible
onions because I'm just an onion fan the
onions go on I know you didn't watch
this happen but I made bacon so I think
two pieces of bacon broken in half or
rather fitting for this max don't you
next our chicken and I always say don't
be cheap right like fill it up make this
something that you really want last but
not least my gravy that eventually got
thick enough
and I gotta say for anybody that's stuck
inside for anybody that's under
quarantine anybody that's in isolation
that is one damn fine-looking little
sandwich to eat and I'll give it just a
little more of our seasoning the win in
the gravy just to finish it off there's
no right or wrong way to do this so I'll
do this could I actually pick it up
should have a bite this way yes I shall
salivating there's this thing called a
hot brown that is famous in New Orleans
Louisiana I think it's a lot like this I
just gotta go
oh my god
look
you could use jar gravy and just make it
better
the bread is sweet the gravy is savory
they go together really well the bacon
smokey crispy does its thing perfectly
you know this is missing it was missing
an egg an over easy fried egg would be
tremendous but I can't eat all this
because tonight is Passover and we did a
quick episode because I gotta get back I
got to finish the brisket I've got
chicken soup I gotta get happening and
we're not all having it together each
part of the family is making different
components I'm in 20 minutes we're gonna
meet just for a few minutes and
everybody will share out what they've
gotten everybody will go home with parts
of all of it and it will have a Passover
