If you're a baconand egg fan, you'veprobably heard of thepopular LA eatery Eggslut. It's got lines of people wrappedaround Grand Central Market. The fried eggs, theperfectly crispy bacon, the brioche bun, allof it makes for an eggsandwich that is to die for.But I don't always havetime to wait in line,so I've created anEggslut-inspired sandwichthat you can make athome in just minutes. And it all startswith what else?Bacon.Perfect bacon is actuallya lower temperature. So I keep it at medium low. While that'shappening, I'm actuallygoing to basically make agrilled cheese sandwich, and then insertfried eggs into it.What I'm going to do is combinethe chipotle and the ketchup. And we're putting itonto one piece of bread. And then, I have mytwo pieces of cheese.I think it looks really coolwhen you put them in diamondshapes like this becauseI actually love itwhen the cheesemelts out and it getsreally crusty on the edges.I love that texture. You seal it up.Just use some softened butter.Butter the entire thing. And one of my favorite placesI visited as a kid was Prague.Every morning, my familyordered Bohemian eggs.Bohemian eggs sounds fancy. All it is, is you frythe bacon and crackthe egg directly on top of it.So I like to actually crackmy egg into a bowl first, and then pour thaton top of the bacon. It just means Ihave more control.I want to try to landthe yolk in the middle. You want to go slowlybecause the yolkis going to want to run away.I'm just going to scooch it.That's pretty good.OK.I'm just going to crack alittle bit of fresh pepperon top of this.Beautiful.So this is going to keepcooking until the bacon isnice and crisp and theegg is fully cooked. This is the Italian wayof frying eggs, whichis you baste it in the fat.If you're going to do afried egg, fry an egg.You know the eggs are readywhen the whites are justopaque and not runny anymore. You can always cook it alittle bit longer if you likethe yolk to be alittle more set,but I think it'sperfect like this. The perfect, littlesandwich unit.I immediately go in to makingmy grilled cheese sandwich. And I want to do this rightaway because that yolkis a ticking time bomb.I want it to still be runnyand hot and so delicious. So our grilled cheesesandwich is going ondirectly into that bacon fat.And same thing, medium low, because I want the breadto be completely golden brown.I don't want it to get burnt.Grilled cheese sandwichis thoroughly grilled. And we have to open it to putthe eggs and bacon inside.I'm going to use a spoonto help me with this.It looks so good.Oh my gosh, all that cheese. Then, we're going totake our fried eggand put it right in the middle. All right, the top goes on.And slice it through.Oh my gosh.I've got yolk.I've got cheese. What's not to love about that? This is going tobe just glorious. All right. Here goes.I mean, I'm kind of madI didn't think of thisuntil like going to Eggslut.I'm thinking of allthe years I couldhave been eating the sandwich. So hopefully, thismeans that youguys get to enjoy this bacon, egg, and cheese wonder.Claire puts her own spin on Eggslut's bacon, egg and cheese breakfast sandwich. Place the cheese between the bread at an angle so that the edges hangover the sides of the bread. Butter the outside of one bread slice with half the butter. Heat a skillet over medium heat. Press the sandwich on, buttered-side down. Press until the bread is golden brown and the cheese has started to melt. Butter the other side (which is facing up) with the remaining butter and flip. Cook until golden brown and the cheese is gooey, this should all take 3 to 4 minutes. Remove the sandwich from the heat and hold. Meanwhile, in a pan over medium heat, cook the bacon until barely crisp, about 5 minutes. Flip the bacon, pushing the two pieces next to each other to form a square. Crack the egg on top, cooking into the bacon. Continue cooking until the egg is set, about 5 minutes. Open up the sandwich (use a spoon to help pull apart the bread) and slide in the eggs and bacon. Close up, slice and enjoy. Subscribe to our channel to fill up on the latest must-eat recipes, brilliant kitchen hacks and content from your favorite Food Network shows.
